Easy Spicey Red Curry Chicken and Vegetables

This is a quick and easy Gluten Free and Dairy Free casserole for any day of the week. No fuss, no muss just a quick chop of the veggies and chicken. Throw it in the oven and start to relax. Enjoy this with a nice red wine and gluten free crispy flatbread.
2 pounds potatoes cut into 1\" peices
2 large carrots cut into 1\" peices
1 large onion diced
1 head of mustard greens or your favourite leafy green vegetable
4 cloves of garlic minced
2 tsp salt
1 tsp black pepper
1 tsp ground coriander
1/4 cup olive oil
1 pound chicken cut into 1\" peices
1TB corn starch
2 tsp red curry
1/2 tsp cayenne pepper
Cut the vegetables into one in slices. Chop the greens. Place all of the vegetables into a casserole dish. Coat with the olive oil. Sprinkle on the spices and toss well to coat evenly. Place in a pre-heated 375 F 190 C Gasmark 5 Moderately Hot oven for 20-25 minutes.
Combine the remaining ingredients in a plastic bag. Add the chicken and shake vigorously to coat the chicken. Add chicken to the vegetables after 20-25 minutes. Place casserole back in oven and bake for another 20 minutes. Check chicken to make sure it is cooked through. Serve immediatey and enjoy.
