Too many cucumbers in the garden? This is a really easy way to make crunchy pickled cucumbers, and much quicker than the traditional way..
1 large cucumber sliced
1 tsp salt
1 onion thinly sliced
1/2 tsp mustard seeds
1 cup white or cider vinegar
1/2 cup white sugar
1/4 tsp celery seed
1/4 tsp turmeric
garlic and chilli flakes
Mix in a microwave safe bowl.
Microwave on high for 7 mins, stirring once or twice until the cucumbers are tender and the onions are translucent.
Transfer into a sterile container and keep in fridge when cooled.
Warning! They are so nice they won´t last long!
