its an old traditional recipe
Ingredients
Makes 4 serves
To make the minced stuff
300 grms minced (a blend of beef and pork)
A handful of parsley
1 dry onion peeled and chopped
1 tea sp salt
¼ tea sp pepper powder
3 table sps bread crumbs
1/4 cup olive oil
To make the eggplant wrap
2 eggplants sliced and salted
1 table sp olive oil
2 tomatoes sliced
Method
Prepare the minced stuff ,making a blend of minced and herbs….
In a bowl add minced , onion, parsley, bread crumbs ,olive oil. Combine them and keep the blend aside.
Now you have two options. You can either fry or bake the slices of the eggplants. I prefer the first option, but the second is healthier….Anyway.If you choose the first one you can fry the slices for 2 minutes each,and then you may drain them to avoid the olive oil excess. If you choose to bake them ,just brush every slice with a portion of olive oil and then bake them for 5 minutes ,using a baking pan.
Now make mince rolls using your hands and keep them aside. Pick an eggplant slice and coat a minced roll. Place the rolls in a baking pan.
Cut slices of tomatoes and place them in a baking pan.Add some salt .Place one eggplant roll on every tomato slice.Add olive oil and a glass of water.
Add some tomato sauce (use fresh tomato...NO ketchup) on top.
Bake for 50 minutes ,in 200 C. You can add a yellow cheese slice on every roll if you like to give an extra taste…and more fat in your dish…
