this is a very tasty and easy to make salad, served with home made bread toast and cherry tomatoes...
Ingredients
3 eggplat, baked and peeled
1 onon, finely chopped
sea salt
1 tbsp lemon juice
4 tbsp of mayonnaise
a few parsley leaf, finely chopped
Method
Preheat oven at 250\'C ( use grill ) and baked eggplant.
When the skin is black take out and pelled. Use an plastic knife for chopped eggplant. Add chopped onion to salad then season with salt and add 1 tbsp of lemon juice. In final add mayonnaise and continuous to mix.
Season with salt and lemon juice if you need.
Seve with chopped tomatoes and parsley leafs.

I'm Romanian too and I can say whole hearteadly that this is my favourite dish ever!! For a great salad don't bake the eggplants in the oven but rather cook directly on the cooktop - I know it's messy but it's the best way. The way I like it is without garlic, just onion, and with home made mayonnaise. It's really easy to make and it beats by far the supermarket mayonnaise. Add a little mustard for the flavour and mustar also helps it from spoiling (using a hard boiled egg yolk has the same effect) and add a little lemon juice - fluffy and yummy. No parsley needed. Maybe a slice of feta chesse. Enjoy!

This recipe is very Romanian as we've prepared it for years. We prepare it a bit different though, instead of a whole onion we use haf onion and 1-2 garlic cloves. It adds a bit more flavour. Also you don't need mayonnaise, according with my version, because I use some sunflower oil ( about 3-4 table spoons) and an egg yolk and I'm mixing everything togetherfor 5 minutes with the hand mixer ( full speed)
