Ingredients
6 slices bologna ( 1/8” thick)
6 eggs Salt & pepper to taste
Garnish with chili powder
Grated cheddar cheese (optional
Method
In a skillet, over med heat, fry bologna on one side until centers puff (approx 30-45 secs). Left bologna slices with tongs and place into muffin cups or pan (lined with parchment paper). Firmly press into place so they fit snug. Repeat with remaining bologna slices. Break egg (do not break yolk) and place into centre of each cup (this will also hold down the bologna). Season to taste. Bake uncovered at 350 degrees F for 15 – 20 minutes or until eggs are set (depending how you want your eggs). Remove from oven. Carefully place on plate. Garnish with a pinch of chili powder. Serve with toast, hash browns or your favourite side-dish. Excellent with a good cup of steeped tea.
