An easy way to improve upon the all-time classic grilled cheese sandwich with some better cheese and a hint of spice.
Ingredients
2 slices white bread
50g emmenthaler cheese
50g good quality cheddar cheese
Big pinch of cayenne pepper
Big pinch of smoked paprika
Black Pepper
Butter
Method
Spread one side of each slice of bread with butter
Grate both cheeses, add the spices and a generous sprinkling of black pepper. Mix with your hands so that it is well combined.
Put a small knob of butter in a frying pan and place on a medium heat.
Evenually spread your spiced cheese over the non-buttered side of one slice of bread, then top with the other slice, butter facing up.
Carefully place the sandwich in the middle of the frying pan. Press down using a heavy bottomed pan. Turn every 30 seconds until both sides are a crisp, golden brown.
Cut in half and enjoy.
