  • Filling:
  • 800 g of apples, cleaned and cut into small chunks, not sliced!!!)
  • 1 tbsp of cinnamon
  • 2 tbsp of brown sugar
  • 1 tbsp lemon juice
  • (mix those together)
  • Dough:
  • 200 g mixed wholegrain flour (oat, wheat, linen seeds)
  • 100 g plain wheat flour
  • 50 g rye flour
  • 25 g fresh yeast
  • 1/2 tsp salt
  • 1 tsp sugar
  • 1 glass (250 ml) apple juice
  • 1 1/2 tbsp sunflower oil
  • Cover:
  • 2 egg whites
First make the pre-dough.
Crumble yeast into a large bowl and nip together with half of the flour, dry.
Add salt.
Add sugar and then fluid. Knead with a wooden spoon (if you use a metal one, you´ll get blisters)
Leave to rise for 45 minutes. feed the cat and walk the dog while you wait.
Then cut the apples and mix with lemon juice, sugar and cinnamon. Don´t sneeze onto the filling, should cinnamon get into your nose.
Knead in the rest of the flour until you get a Nice firm dough, finally add oil, it gives some extra bounce. Make sure the dough doesn´t escape. Leave to rise and meanwhile, clean the rooms and take the garbage out. Then switch on the oven. 250 degrees.
Grease a large oven pan and roll out the dough on it.
Cover the dough with apples pretty thick, spread out and place the pan on the 2nd rack from below. If you can switch Top-Bottom heat then first top for 5 min, then bottom 25 minutes.
While the cake bakes chase the chicken and get some eggs. crack the eggs and put the whites in a bowl, whip to firm peaks.
Take out the cake and spread the egg white on it.
Give it another 5 minutes on high heat. Don´t burn your fingers, light a candle, if you crave for living fire.
Eat some cake. Don´t be greedy and give some to neighbors and tired colleagues. Especially cause I didn´t. Bastard me. Well, I´ll make a new one.
Go running 1 hour after eating cause this will make you so fat if you don´t.
