the combination of flavors in this stew seemed to support each other and it may be my new \"comfort food\".
Ingredients
150 g wild mushrooms
2 medium potatoes
1 green paprika
1 huge onion
200 g zucchini
400 ml water
1 tbsp cooking oil
1 mushroom stock cube
1,5 tsp paprika powder
1 tbsp horseradish
10 dried plums
salt, pepper
Method
heat some oil and add paprika powder, let turn into a paste. Then add the onions, mushrooms and paprika (cut into long strips or quite large circles) all at once. Cook for 10 minutes. add enough water to cover the veggies, the stock cube and the potatoes cut into large cubes. Let the veggies turn semi soft. Add more water if necessary but don´t turn the stew into a soup y´know. when the potatoes are almost done, add zucchini (cut into circles and then quarters), whole dried plums and horseradish, salt and pepper. turn down the heat and let the stew cook through.
serve with barley bread and cream cheese.
