FASOLADA- greek bean soup

FASOLADA- greek bean soup

enjoy our \"national\" dish... we usually serve with fresh bread and some salty fish-like herring etc...with feta cheese-everything mention ON THE SIDE!

Ingredients
1/2gr beans
chopped :
onions 1-2, carrots 1-2, celery
chopped tomatoe 1-2
&tomato paste 1tablespoon
chopped parsley
olive oil
salt
pepper-or chilli/paprika

Method
you soak beans over night in plain water!

next day you throw the water, wash it and put nea water in pot and beans back in pot
add onions, carrots, celery,
add water to cover everything
boil about an hour- 1 1/2

then add the tomatoe- finelly chopped..
the oil ,salt and pepper (and chilli or paprika if you chose to add as well)
leace another half hour to reduce...perhaps a bit more....
ALWAYS ADD PARSLEY AND DILL

soup should be just a bit thick, between watery and thick....

TIP- ALWAYS better the NEXT day..that\'s why I soak yesterday overnight I cooked today and we shall eat TOMMORROW!
