FINGERFOOD - tomato-mozzarella-nibbles with garlicy rocket oil

I´ve got a passion for tomatoes and mozzarella in any combination you could possibly think of. It´s now beginning of april and not really tomato-season, but I couldn´t resist!
I thought these little nibbles would be a nice starter to a light three-course-menu. I have only written down the ingredients you need, but not the amount of everything, as this is not necessary in this case.
For a starter I thought of three little nibbles per person.

Ingredients
wholemeal bread

----------------------

egg whites

salt

pepper

olive oil

----------------------

cream cheese with herbs

tomatoes (preferably ones that can be cut in slices the right size)

some basil leaves

mozzarella

rocket oil*

-------------------------

cookie cutter of any size or shape you like

-------------------------

freshly ground pepper

Method
Bake a flat omelette with the egg whites, season it with salt and pepper. Carefully turn it as soon as the bottom is cooked. Make sure it doesn´t take colour! Let it cool off completely.

Cut the base out of the wholemeal bread. You can use a cookie cutter or simply cut little squares with a knife.

Smear them with some cream cheese.

Cut the omelette into the same shape as your bread base, and place it on the cream cheese.

Cut the tomato in slices and place them on top.

Next is a basil leave, followed by a piece of mozzarella.

Finally add a tiny bit of rocket oil.

The nibbles should be served at room temperature. Sprinkle some freshly ground pepper on top just before serving.
