  • 3 or 4 large potatoes
  • 2 medium onions or 1 leek
  • some potato weight in cheese like Asiago, Montasio or similar ( one fresh seasoning 3/4 months- one medium seasoning 6/8 months- one old seasoning such as Parmesan cheese)
  • salt to taste
boil potatoes than peel them and mash with a fork (keep it warm)
cut cheese into smal cubes. ripe old cheese such as Parmesan
In an omelette pan stir fry chopped onions or leeks with a little bit of olive oil
Than add mashed potatoes and a little salt.do not use toomuch salt because the mixture of cheese could be already tasty.
in an another saucepan put the mixture of cheese and let it melt
. than add the melted cheese in the potato pan and mix well together.
level everything just as a cake dough and let it cook until it comes crusty and ligh brown
than turn the "omelette" and do the same on the other side. it will take at least 20-25 min
you may absorb the fat coming out of the cheese with paper

this is a typical recipe of ou rregion just as a cheese omelette
the basic is only cheese. with potato and onions tastes more complete and richer
