A delicious creamy soup with a kicking taste of the Orient!
Ingredients
1 x small Pumpkin (or squash or butternut squash)
2 x Sweet Potato
1 x tablespoon of creamed coconut
Butter or Olive Oil (which ever you prefer, both work well)
Crushed Chillies (dried flakes)
750ml of Veg Stock
250ml of Skimmed Milk
Salt and Pepper
Method
Chop pumpkin and sweet potato into small chunks. Put in a large soup pot / saucepan. Add butter or olive oil (enough to coat the veg) and season well. Cover with saucepan lid and on a low heat sweat the veg for 10 - 15mins. Add the veg stock, milk, creamed coconut and chillies and simmer gently for 15 - 20mins (or until all veg is soft).
Remove from heat and blend. (I use a hand blender and pulse the soup so that there are still some veg chunks, but you could also blend completely for a smooth soup.
Season to taste.
