  • 1 x small Pumpkin (or squash or butternut squash)
  • 2 x Sweet Potato
  • 1 x tablespoon of creamed coconut
  • Butter or Olive Oil (which ever you prefer, both work well)
  • Crushed Chillies (dried flakes)
  • 750ml of Veg Stock
  • 250ml of Skimmed Milk
  • Salt and Pepper
Chop pumpkin and sweet potato into small chunks. Put in a large soup pot / saucepan. Add butter or olive oil (enough to coat the veg) and season well. Cover with saucepan lid and on a low heat sweat the veg for 10 - 15mins. Add the veg stock, milk, creamed coconut and chillies and simmer gently for 15 - 20mins (or until all veg is soft).

Remove from heat and blend. (I use a hand blender and pulse the soup so that there are still some veg chunks, but you could also blend completely for a smooth soup.
Season to taste.

Method
