Fattoush (Middle Eastern Salad)

Ingredients
Makes 2 main course or 4 side salads

1 large pitta bread, toasted,(cut or torn into small pieces)
8 baby vine tomatoes,halved or quartered
1 large chunk of cucumber (about15cms long), peeled,deseeded then sliced
1 small red onion, thinly sliced
2 large bunches of flat leaf parsley, chopped
2-3 tbsps of chopped mint (optional)

Dressing:
approx• 3 -4 tbsp olive oil
Juice from 1 large lemon
1 clove of garlic, finely chopped
Salt and pepper to taste

Method
[b]This recipe was given to me by an Egyptian friend and is one of my favourite Middle Eastern salads. I love it as a main course salad but it also tastes great served with any kind of grilled meat/fish dish.[/b]

1. Put all of the prepared salad ingredients into a serving bowl (including the bread).
2. Mix dressing ingredients and add to the salad, tossing well.
3. Allow to marinade for a few minutes before serving.
