Fava Bean Soup

Fava Bean Soup

This soup has such a great flavour people will ask \"What is in that soup?\" and the fava beans give a satisfying taste of comfort! It is a great one to serve to friends the day after it is made.

Ingredients
1 cup dried, skinned• split, fava (broad) beans
2 tbsp olive oil
1 onion chopped
1 clove garlic chopped
1 potato chopped
water or unsalted stock
1 tsp ground cumin
1 tsp sweet paprika
1/4 tsp chili powder
salt
juice of 1 lemon
1/4 cup chopped parsley

Method
Soak the beans overnight and rinse well.
Cover the base of a large pan with the olive oil
Fry the onion and garlic gently about 5 minutes until lightly golden and melty
Add the potato and beans with water or unsalted stock to cover and simmer for 50 minutes or until the beans are very soft (the potato will surely be soft as well!)
Add the cumin, paprika, chili and salt with more water or stock to make it properly soupy. The stock can be salted at this stage.
Cool enough to blend smooth and return to the pan.
Stir in the lemon juice and chopped parsley
Even better the next day.
