Fennel salad 2 Ways

You will notice from the ingredients list that what you really want is 1 spanish onion & 1 fennel bulb - with these as starting points I have developed 2 salads that can be made very quickly & are very tasty with BBQed meats or cold cuts when cooking inside is not really an option in the hot Aussie summer.

Ingredients
1 orange
1/2 fennel bulb
1/2 spanish onion
handful parsley
extra virgin olive oil
salt & pepper

1 apple
1/2 fennel bulb
1/2 spanish onion
handful parsley
3 tbls mayonaise - whole egg
1 tbls cider vinegar
salt & pepper

Method
Orange & Fennel Salad

Peel & thinly slice onion.
Thinly slice fennel
Peel the orange & thinly slice orange, reserving any juices.
Pick leaves from parsley
Toss altogether with juice in bowl, dress with oil, season to taste.

Apple & Fennel Salad

Thinly slice onion, fennel & celery.
Pick leaves from parsley.
Decore & thinly slice apple.
Toss in a bowl with mayonaise.
Season to taste.
