Ingredients
Rocket or the leaves from the tip of a celery stalk

Green Apple

Fennel Bulb

Danish or Greek Feta

Walnuts

Olive Oil

Balsamic or Apple Cider Vinegar

Honey

Wholegrain mustard

Soy Sauce

Black Pepper

Method
Wash the rocket or celery leaves and put into a salad bowl (as much as you need). Chop your green apple into chunks or thin slices and toss into bowl. Core and finely slice the fennel bulb and toss in the bowl. Break walnuts into smaller pieces and throw in mixing the salad roughly.

To make the dressing add 3 parts olive oil to 1 part vinegar, a tsp of wholegrain mustard, a tsp of honey, a tsp of soy sauce, black pepper and mix.

Pour over salad and mix through thoroughly. Crumble feta over the top and voila! A salad you never want to finish!
