  • 4kg unsmoked gammon joint
  • 2 cinnamon sticks
  • Cloves
  • 3 dried chilies
  • 1 star anise
  • Thyme
  • Bay leaf
  • 1 clementine (cut in half)
  • Coca cola
Put all ingredients in a pot and fill with coca cola until covered
Cover with tin foil
Put on grill, close lid and leave fro 2,5 - 3 hours
(can be cooked on the stove too)
Once gammon is cooked (cooked gammon= ham), take off the BBQ, put to side.
Heat up jar of marmalade in a pot.
Take off the rind of the ham, but leave the fat on.
Score into the fat, stick in some cloves and then smear the marmalade over the whole joint. Put it back on the BBQ (oven if cooking indoors). Leave 25 -30 mins over high heat to caramelize the marmalade.
Done.
