Festive Cranberry Quinoa Salad

This is a perfect nutritious and delicious side dish for a festive meal and easy enough to make for an everyday dish. High in plant based protein and loaded with phytonutritents!!
3 cups of cooked quinoa
1/2 an apple, shredded
1 carrot, shredded
2 inches of zucchini, finely chopped
1 small yellow bell pepper, finely chopped
1 cup unsweetened cranberries
Handful of fresh flat leaf parsley, finely chopped
Handful of fresh cilantro, finely chopped
1/3 cup olive oil
1/4 cup apple cider vinegar
1 garlic clove, minced
Dash of cayenne pepper
1/4 tsp sea salt
Rinse quinoa and cook according to directions, for about 10 minutes. Meanwhile prepare dressing in a big bowl. Add the chopped and shredded vegetables, cranberries and herbs. Add cooked quinoa and mix well.
Makes about 10 accompanying sides or 3-4 main dishes.
