  • 1 Pomegranate worth of seeds
  • 1 Brick of Feta
  • 1 Cucumber
  • Tomato of your choosing
  • Olive Oil
  • Chives
  • Salt/Pepper
Dice the tomato into a colander and add salt to bleed the juice. Dice the cucumber, crumble the feta and seed the pomegranate. Mix the above in a bowl with diced chives. Add a few glugs of olive oil, salt and pepper to taste. (hint: seed the pom under water to avoid getting any juice on you or your workstation.)

Quantities of the ingredients will depend on how you like it, personally I shoot for equal parts of everything. I find it tastes the best after a night in the fridge. Other possible ingredients to add/substitute are red onion, basil, and lemon or lime juice.

This can be used for many applications. I use it as a salsa with chips, as a salad itself (or with greens), or even as a topping on fish or meat. Please let me know if you have made something similar or have suggestions for other fun uses.
