Feta Rolls

Feta Rolls

These are lovely served with a salad or can be eaten just as they are , as a snack.

Ingredients
Makes 12 small rolls

6 square sheets of phyllo pastry, cut into 2 strips
1 packet of feta cheese ,crumbled
1 small egg, beaten
Approx• 100ml milk
1 small onion, very finely chopped
1 large clove of garlic, finely chopped
1/2 - 1 small chilli, finely chopped
1 small bunch of parsley, finely chopped
A little pepper
Some olive oil for frying

Method
1. Place all of the filling ingredients in a large dish or bowl. Using a fork, mash together then beat with the fork till you have a thick, chunky \'cream\'.
2. Take 1 strip of phyllo pastry and spread approx 1 heaped tsp of cheese on the top end of the strip.
3. Roll towards you (just 3-4 cms) then fold the pastry edges over and continue rolling . Dip the end of the pastry in a little dish of water, then seal. Place them seam side up on some baking parchment.
4. To cook, heat a little olive oil till hot and fry gently on both sides till golden brown. Alternatively, deep fry or coat the rolls with olive oil or butter and bake in a hot oven (around 200C) till done.
