Yes, you read correctly - Fish Willies. Now I haven\'t a clue what this used to be called when the recipe was first conceived, but in the intervening years it has come to be known as \"Fish Willies\" and so it shall stay. *chuckle*
Ingredients
450g Cod loin (best, but expensive) or Haddock Fillet (next best, more affordable), skinned.
Smoked streaky bacon, unsmoked will do.
Juice of 1 Lemon
Olive oil
Dill (a large handful of fresh - don\'t use dried), chopped
Method
Slice fish into longish chunks and marinade briefly (10-20mins) in lemon juice, olive oil and Dill.
Wrap each fish piece in a slice of streaky bacon. If the slices are particularly long, you\'ll have to double them over and then wrap in bacon. Place on flat oven tray or on wire rack in oven tray.
Bake in medium oven (180deg) for 20 mins approx., then turn the oven up to 200deg and bake for up to 10mins, just to brown the bacon slightly. You\'ll have to guage this for yourself, but make sure not to over-cook the fish!
Serve with mashed potato, peas, green beans and carrots with parsley sauce. Delicious!
