Fishy Footballs

This is my take on Jamie´s salmon fishcakes - made for my 4 year old daughter.

Ingredients
300 gms potatoe
100 gms salmon fillet
half a grated onion
1 free range egg beaten
2 tbsp mayonnaise
half a lemon
fresh breadcrumbs -2 slices of rye bread
plain flour
olive oil

Method
Boil the potatoes for 20 mins untill very soft . Meanwhile cook the salmon fillet in a parchment paper parcel - or foil in the oven 180·C for 15-20 mins, with a little lemon juice and a little ground pepper.
Cook the grated onion in a little oil. Drain the potatoe and leave to cool before mashing with 2 tbsp of mayonnaise. When the salmon is cooked flake this into the potatoe (removing any bones) and add the onion - mix well.
With floured hands form little footballs - I made 16.
Roll the footballs in flour, then dip in the beaten egg and cover with breadcrumbs. Place the footballs in the fridge for an hour (to firm up) before cooking. (I froze half of mine).
Place the footballs on a lined baking sheet and spray with olive oil and grill for a couple on minutes unitl crisp.
