4 plum toms
2 Japē Eggplants
4 red bell peppers
1/4 cup olive oil
2 red onions, not peeled
Kosher salt, pepper
Rub toms, eggplant, and peppers with a little bit of olive oil and salt on baking sheet... start with the onions, as they do take longer.
Roast in 375 oven for 40 min or till soft... onions do take longer. Allow to cool and remove skin of toms and onion. Cut the eggs plant in half and then scoop out the flesh
Now take half of the veg and blitz it in a food pro adding olive oil ad salt to create a paste sauce.
Then add it to the pizza as a type of sauce, and then scatter the rest of the seasoned veg and finish in the pizza oven
