Don\\\'t read the ingredients list as 1-2 or 1-3, or your muffins will turn out yuk! *chuckle* Its a half and a third! These are gorgeously intense cheesy muffins that go brilliantly well with a cup of coffee or some fresh tomatoes.
Ingredients
10g strong cheddar, grated
A small piece of Blue Vinney cheese
A rather bigger piece of Stilton
(In fact, you can use any type of cheese you like, so long as its got good flavour!)
Grated Parmesan to taste
2 cups strong plain flour
1 tbsp baking powder
1/2 tsp salt
1/2 tsp ground black pepper
1/2 tsp paprika
1 tsp Dijon Mustard
a shake of Cayenne
1 cup milk (with extra if required)
1 large egg
1/3 cup vegetable oil
Method
Take a large mixing bowl.
Place all the dry ingredients into the bowl.
Break the cheese into small chunks (crumble it, if it will crumble!) into the bowl.
Add the wet ingredients.
Mix like mad.
When its a reasonably thick consistency (i.e. will cling to the spoon and takes its time to drop off), decant into Muffin trays. You may need to use a little more milk to ease the mixture - it depends on the creaminess of the cheese and the size of your egg!
Once divided into the Muffin tray, sprinkle with Parmesan and place into a pre-heated oven at 180deg for 25-30 mins.
They are done when a skewer comes out clean.

I can not see how bad this cheese muffin can be. I will test it this weekend and let you know. I can actually picture how nice this muffin is going to be.
Absolutely awful - inedible - far too much flour, barely any cheese flavour. Very disappointing.
