  • CORN AND JICAMA SALAD
  • These fresh tastes and crisp texture are a wonderful condiment for grilled seafood or meats as well as a main salad for a summer day. The avocado becomes a creamy dressing along with some of the vegetable juices in this raw and vegan delight.
  • 1 avocado, peeled and chopped
  • 1 red bell pepper, seeded and chopped
  • 6 small tomatoes, chopped
  • 2 Tablespoons diced red onion
  • 1-2 cups peeled and chopped jicama (to taste)
  • 3 ears of corn, corn scraped off
  • 1 jalapeno, peeled and diced
  • ½ cup chopped cilantro
  • Juice of1 lemon
  • Salt to taste


Combine all ingredients in a large bowl and allow to sit for 30 minutes.
Taste and adjust seasoning if needed.

Try serving this in endive and radicchio leaves.
