These fresh tastes and crisp texture are a wonderful condiment for grilled seafood or meats as well as a main salad for a summer day. The avocado becomes a creamy dressing along with some of the vegetable juices in this raw and vegan delight.
Ingredients
CORN AND JICAMA SALAD
These fresh tastes and crisp texture are a wonderful condiment for grilled seafood or meats as well as a main salad for a summer day• The avocado becomes a creamy dressing along with some of the vegetable juices in this raw and vegan delight.
1 avocado, peeled and chopped
1 red bell pepper, seeded and chopped
6 small tomatoes, chopped
2 Tablespoons diced red onion
1-2 cups peeled and chopped jicama (to taste)
3 ears of corn, corn scraped off
1 jalapeno, peeled and diced
½ cup chopped cilantro
Juice of1 lemon
Salt to taste
Method
Combine all ingredients in a large bowl and allow to sit for 30 minutes.
Taste and adjust seasoning if needed.
Try serving this in endive and radicchio leaves.
