Fresh quick delicious and simple Burritos.

This is such a simple and quick and fresh recipe and can easily be turned into a much simpler quesadilla with just the tortilla, salsa sliced onion garlic and chesse. You can add a side of brown rice, salad, sour cream and quacamole for something much heartier. This is a freestyle recipe, add and subtract to your personal taste, my fiance and I vary greatly he adds way more cheese than myself I add lots more salsa and spinich.

Ingredients
Tortillas, half red half green capsicum, or one of either,thinly sliced white onion, spinich, jalapenos, I use the ones in a jar but fresh ones good too, chopped fresh garlic, grated cheese, tin of tomatoes, salt• kidney beans, tinned or prepare your own• Handful pf chopped parsley.

Method
Lay tortilla on a plate and across the middle make a bed of spinich then a layer of thinly sliced onion and on top of that a layer of kidney beans, sprinkle the chopped garlic on top of beans and jalepenos also, season with the salt. Put the tin of tomatoes and diced capsicum in the blender to create salsa and then spoon this over the ingredients, still making sure it\'s all on top of each other down the middle so you can role it up. sprinkle on cheese and another layer of spinich. Role it up and on top of your burrito spoon more salsa and sprinkle with cheese.
Microwave until cooked, depends on your microwave with timing, then put under the grill if you have one to crisp it off, top it off with a genourous amount of chopped parsley or fresh chopped coriander, or both.
