This is a typical Maltese recipee.
Ingredients
300gr spaghettini no• 1
3 eggs
5tbsp grated cheese of your choice
5tbsp ricotta
Salt & Pepper
Olive oil
Parmesan Cheese
Method
Cook the spaghettini according to package.
Beat the eggs together with the cheese, ricotta, salt and pepper.
Add the spaghettini and mix well until the pasta is well cover with the eggs mixture.
Pour some olive oil in a frying pan.
In small batches, add the pasta mixture to the pan until you cover the whole surface.
Fry on low heath until golden brown on both sides.
Serve hot with sprinkles of parmesan cheese.
