Ingredients
4 trout
1 tablespoon seasoned flour
3 oz• butter
2 oz• flaked almonds
2 tablespoons lemon juice
1 tablespoon chopped parsley
Method
Wipe the fish with a damp cloth and then toss in seasoned flour. Melt 1 oz. butter in a frying pan. Add in the almonds and fry till they are lightly browned. Now set the almonds aside and add the remaining butter to the pan. Once the butter is hot, add the trout and fry gently. Turn the fish over once during cooking. Keep cooking until the fish has nicely browned. Sprinkle the fish with the lemon juice, parsley and browned almonds and then transfer to a serving dish.
Tips:
When buying the trout for this dish, ask the fishmonger to gut the fish.
