This recipe was given to me by my mother\'s friend from Venice. They are traditionally made during Carnevale, leading up to Ash Wednesday and Lent.
Ingredients
3 Cups cooked rice, preferably Arborio or Carnaroli
2 Cups self rising flour
4 eggs
1/3 cup sugar
1/3 cup milk`
1 cup golden raisins
zest of one lemon
1/2 teaspoon vanilla
dash of whiskey or rum
Method
Mix all ingredients until well combined. Drop by teaspoon in 375 F. oil. Fry until well browned on both sides. Drain, dust with powdered sugar, enjoy while still hot.

We suggest you to add a little bit of warm honey on top of the frittelle before dusting with powder sugar....That's how we eat them in Sicily and they are delicious!!!
