First grate your zucchini, tip into a cloth lined colander, sprinkle with the salt & let stand for 10 minutes.
In a large bowl mix both flours & all the spice, set aside.
Squeeze out the zucchini, getting out as much liquid as possible.
Add zucchini, yogurt, vanilla & oil into the flour bowl, and stir until combined.
Beat eggs & sugar until thick & pale, gently fold this into the flour mix.
Bake for 50-55 minutes. Until golden & springs back to the touch.
OPT : Icing made with a teaspoon of vanilla yogurt & 1/4 cup of icing sugar.
