  • 1 cup S.R flour
  • 1 cup wholemeal flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp garam masala
  • 3/4 cup sugar
  • 3 eggs
  • 3/4 cup yogurt
  • 1 tsp vanilla essence
  • 1/4 cup oil
  • 2 cups grated zucchini
  • 1/2 tsp salt.
Set oven to 180 degrees Celcius & line a baking dish, loaf pan, cake pan with baking paper.

First grate your zucchini, tip into a cloth lined colander, sprinkle with the salt & let stand for 10 minutes.

In a large bowl mix both flours & all the spice, set aside.

Squeeze out the zucchini, getting out as much liquid as possible.

Add zucchini, yogurt, vanilla & oil into the flour bowl, and stir until combined.

Beat eggs & sugar until thick & pale, gently fold this into the flour mix.

Bake for 50-55 minutes. Until golden & springs back to the touch.

OPT : Icing made with a teaspoon of vanilla yogurt & 1/4 cup of icing sugar.

This started off with me wanting to make zucchini/courgette in the U.K bread... simple some might say... well every recipe had a heap of raising agents (I didnt have any in the house) & no instructions on whether or not to drain the liquid of the zucchini. So I came up with this instead.

Method
