This is a lovely recipe that tasts so much like the real thing!
Ingredients
2 eggs, beaten
2 cups buttermilk
1/4 cup (4tbsp) butter, melted
5 cups gluten free flour
1 cup sugar
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 tsp xanthan gum
2 tsp ground cardamom
Method
In a large bowl mix together all of the dry ingredients.
Mix together all of the wet ingredients in a jug, and gradually stir into the dry ingredients. Do not use an electric mixer, as it over works the dough.
When mixed leave to rest, it won’t rise very much.
Tip onto a floured surface, adding more flour if it’s too sticky. Roll out to about 2cm thick and cut with a large and small circle cutter.
Fry in hot oil until golden brown, turning as needed.
