This recipe produces quite a light, but slightly craggy looking bun. Almost as good as the real things!
Ingredients
1 egg
275ml warm milk
50g butter, melted
350 plain gluten free flour
1 tbsp xantham gum
2 tsp mixed spice
50g caster sugar
1 sachet dried yeast
100g mixed fruit
Method
Mix together all of the dried ingredients.
Add the egg, melted butter and gradually add the milk. Mix until the dough is smooth, but it will still be very sticky.
Tip out onto an oiled work surface, and using well oiled hands shape into about 12 buns. Place well apart on an oiled baking tray.
Cover with oiled clingfilm and leave to rise, until doubled in size.
To make the crosses, make a soft paste out of a couple of tablespoons of gluten free flour, a tablespoon of oil, and water. Put into a piping bag with a plain tube, and pipe a cross on each bun.
Bake at 200C for about 25 minutes until golden and cooked.

I made these hot cross buns last week and they are great! Super easy and very tasty. Mine didn't rise much but still taste fine. The recipe doesn't specify when to add the mixed fruit - I'd add it with the dry ingredients next time. <br /> Definitely a saver of a recipe!
Me and my 7 year old daughter (who has coeliac disease) made these today. They are really good and easy to make. She finds shop bought gluten free hot cross buns too spicy and I found other recipes on the web involved a complicated list of different flours. This recipe is perfect - we will be making again.
