An easy and tasty sweet gluten-free pastry.
4oz brown rice flour
4oz ground almonds
4oz butter (or hard margarine for lactose free)
2 1/2oz caster sugar
1 tbspn water
Put the flour,salt, almonds and butter into a bowl, and rub in with your fingers until it resembles breadcrumbs. Stir in the sugar. In a jug, whisk together the egg and water, and add half of this mixture to the pastry. Stir together with the back of a knife until it forms clumps, adding extra liquid if required. Pull together and knead lightly for a couple of minutes until it forms a smooth dough. Wrap and refrigerate for 30 minutes before rolling out between 2 sheets of clingflim.
