Gluten, Dairy and Egg Free Pancakes

I use this to make both savoury and sweet pancakes. For sweet pancakes i simply grease a frying pan with a small amount of dairy free butter (or use oil) and pour 2 ladles of the mixture into a frying pan and swirl around to fill the pan. These turn out like crepe pancakes (though they don\'t seem to colour well so normally very pale). Then serve with whatever you fancy, i tend to use strawberry jam or dairy free ice cream if being extra indulgent!

Ingredients
5oz Doves Wheat and Gluten free Plain Flour
1tsp Ener-G Egg replacer and 2 Tbsp Water (Equivalent of 1 Egg)
200ml Soya Milk
100ml Water
Couple of drops (Literally) Vanilla Essence

Method
For savoury pancakes i use the following ingredients but use whatever you like!

I batch of Pancake Mixture
Small glug of oil
One Gluten free Sausage sliced up
One thin slice of ham torn up
Peas and Sweetcorn
5 round Slices of Pepperoni
Sheeps or Goats Cheese (I like Parlick Fell or Manchego - both available in Sainsburys)

Firstly fry the sausage, then add the ham, peas and sweetcorn. Once cooked pour over the pancake mixture, just enough to cover the peas, sweetcorn etc (The sausages might still stick out slightly but this is fine). Then sprinkle over grated cheese and lay the pepperoni on top. As it would be extremely hard to flip this sort of pancake i take it off the heat one the edges look cooked and place under the grill until the cheese starts to bubble slightly. Then slide onto a plate and eat! I always find it goes very nicely with ketchup and replaces an omelette nicely!
