A light and tasty pancake for sweet or savoury.
4oz rice flour
3oz gluten-free plain flour blend
1oz tapioca flour
large pinch salt
2 egg yolks
2 tbspns vegetable oil
3/4 pint milk
1/4 pint water
Sift the flours and the salt into a bowl. Make a well in the centre and break in the eggs and add the egg yolks. Slowly start to whisk in the eggs and the milk. When half the milk is added, beat until smooth and bubbles rise to the surface. Add the oil and whisk in thoroughly, then add the rest of the milk and mix well. Cover and leave in a cool place for 30 - 60 mins before cooking.
