Ingredients
serves 4
for gnocchi:
about 350 g roast potatoes
1 egg
150 g plain four
a pinch of nutmeg
1 good handful of pea
1 cup pancetta, sliced
200 g cream
2 cloves of garlic, finely chopped
1/4 lemon zest
parmesan cheese
extra virgin olive oil
sea salt and black pepper
Method
Chop the potatoes and put them in a mixing bowl. Crack in the egg and add a good pinch of salt and nutmeg. Mix well with a fork and then work in enough plain flour to bind the mixture together well. Take teaspoonfuls of the mixture, shape into gnocchi and lay on a floured tray.
Heat a large pan with olive oil and add pancetta. When is start be crispy add pea and garlic. Let to cook for a few minutes then add cream. Season with sea salt, black pepper and lemon zest.
Add gnocchi in the sauce and mix very well.
Serve with grated parmesan cheese.

I use '00' flour to make fresh pasta and i wondered if it would also be better to use this for gnocchi or just stick to plain flour?
