Good Friday Cod Hash

Ingredients
1 lb salt cod (pieces or boned)
1 1/2 lbs potatoes
1 lg onion (finely chopped)
3 slices salt pork (cut in sm pieces)
Salt & pepper (season to taste)
Ground garlic (season to taste

Method
Soak salt cod in cold water for approx 6-8 hours (or overnight). In the morning drain and replace with cold water. Bring cod fish to a boil. Add potatoes; bring to a boil and let simmer for 20 minutes or until potatoes are cooked. Remove from heat and drain. Let cool. Flake fish and cut up potatoes in small pieces. Combine and place in a hot skillet with 2 tbsp pork fat. Stir until hash is hot. Season to taste. Serve hot and garnish with scrunchions, onion, and pork fat (see below). Don’t forget your cup of hot steeped tea and fresh bread and molasses.

In a skillet (low heat), fry salt pork until golden brown (or until all fat is extracted). Add onion and cook until light golden brown. Set aside for garnish except 2 tbsp of pork fat (leave in skillet for hash).


Healthy Eating:

Use vegetable oil instead of pork fat

My family has eaten this every year on Christmas morning as far back as I can remeber and it's great!
