  • 2 tablespoons olive oil
  • 1 thinly chopped onion
  • 2 cups arborioi rice (400 g)
  • ½ cup white wine
  • 1 ½ vegetable broth
  • 150 g gorgonzola cut into small pieces
  • 4 tablespoons grated parmesan cheese
  • 2 pears cut into strips
  • 1 tablespoon butter
  • Salt and parsley
In a saucepan heat the olive oil and sauté the onion until it turns golden yellow. Add the rice and sauté it. Add wine and cook it until part of the liquid (2/3) evaporates. After this, pour the broth carefully and cook it for 20 to 25 minutes and stir it so that the mixture will be creamy. The grains must be tender so if necessary pour more water. Add the two kinds of cheese and also the pears. Cook for 2 to 3 minutes. Turn off the flame. Add butter and some parsley or any other herb. If necessary, put a bit of salt.
