  • Yield - 4 doz (depending on size of cookies)
  • 150 g sugar
  • 227 g butter
  • 4 g salt
  • 3 g vanilla
  • 1 egg
  • 60 ml milk
  • 438 g pastry flour
  • 3 g baking powder
  • Wild raspberry jam and rhubarb jelly (filling for
Cream together, sugar, vanilla and shortening until light and fluffy. Gradually add egg; mix while scraping down bowl. Sift together flour and baking powder. Add flour and milk to mix (ensure you add flour and milk in stages to prevent curdling of fat mixture). Blend until nice and smooth. Work dough on a floured table. Chill for 30 minutes (it's easier to handle). Tear off little pieces and roll into small balls.

With your finger, make an indentation (¼ ") in the centre of each ball. Add small amounts of jam filling. Place on a lined cookie sheet and bake at 350 degrees F for approx 12-15 minutes. Cookies should be pale in color. Excellent with a good cup of hot steeped tea.

Tips:

You can use your favourite jams or jellies for the filling
You can use butter or a combination of butter and shortening

As indicated in earlier articles, I stated that I would try older recipes. Please see below an old recipe that my Grammy use to make. The only exception to this recipe, she used all-purpose flour instead of pastry flour. I would tell her they look like big buttons, she would reply smiling, ”they are button cookies.” I know now, she was only appeasing me. But they do look like buttons. Try them and enjoy, let me know how they turn out.
