Ingredients
1 lb or 500g Puff Pastry
2 tbsp butter
2 large sweet onions (Vidalia)
2 tsp fresh thyme
1 tbsp Balsamic Vinegar
1/4 tsp salt & pepper
2 cups Marechal or Gruyere cheese finely grated
1/4 cup blue cheese
2 cups grapes, halved (small ones)
1/2 cup coarsely chopped walnuts
Method
Cut your puff pasty into 2" squares.
In large skillet melt butter. Add onions and cook untl soften. Reduce heat and cook onions until they are a deep caramel color. Put to the side
In another bowl, combine the cheeses, grapes and walnuts. Put to the side
Divide the onion mixture on top of each square of puff pastry and top with the grape mixture. Bake in bottom part of the over at 450 F (230 C) until they are golden on the bottom and pastry is nicely puffed, about 18 minutes. DELICIOUS! Serve warm
