One of the most celebrated Greek recipes, \'spanakorizo\' (spinach rice) is a very easy, healthy and filling dish.
Ingredients
serves 4
1.5 spinach, trimmed, cleaned and chopped
Olive oil
1 small onion, finely chopped
4 scallions, chopped
4 tablespoons finely chopped dill
80 g medium-grain rice
juice of 1 -2 lemons
feta cheese to serve
Method
1. Take a pan and cook the spinach leaves in a good lug of olive oil (medium heat) until wilted.
2. Add the onion and scallions and cook for further 5\'.
3. Pour in 250 ml hot water, the dill, season and steer well.
4.Add the rice, trying to cover to cover it with the spinach leaves (not easy so don\'t get disappointed if you won\'t manage to do it perfectly)
5. Cover and simmer over low heat for 15-20\' or until the rice is down and most of the liquid absorbed. Do not overcook and do not stir during cooking.
6.Turn of the head and place a tea towel between the pan and the lid to absorb the steam for 10-15\' (see picture).
7.Take the lid of, add the lemon (this is up to you, so try to taste) and serve with feta cheese on the side.
