Traditional side dish
Ingredients
Ok you will need for a Greek traditional tzatziki
4-5 Serves
300grms yogurt
2 cloves of garlic
1/2 tb spoon salt
2-3 tb spoons vinegar
a big handful of dill
a half of cucumber chopped and drained
3-4 table spoons olive oil
Method
Put the yogurt in a deep utensil. Mash the cloves of garlic, adding a snap of salt(Of course you will add in the yogurt, the interior of the garlic, not the peel).Add the garlic in the yogurt. Chop the cucumber in as many pieces as you can.Drain it(its very important).Chop the dill .Add all the ingredients in the yogurt, and the olive oil in the end. Mix well the ingredients till the yogurt absorb all the liquids.If you like you can add more salt or vinegar,depends on what you like.
The most important is the choice of the yogurt. There are many types but i personally prefer the ones that are strained.Also you must remember that tzatziki is a side dish that cant be stored in the fridge, for more than 1-2 days because of its ingredients that after 2 days are expelling their water(cucumber) and give to tzatziki a watery taste.So the best is to make a tzatziki portion, not to big and consume it within 1 day.
You can find many\" versions\" of tzatziki especially in the Arabic world where instead of dill they use mint or carrots.Anyway hope you enjoy this one.
