Greek giant beans

Ingredients
500 gr• giant white beans
1 large onion
2 garlic cloves
1 tin of crushed tomatoes
olive oil
celery
origan
2 medium carrots
1 sweet red pepper for fragrance
salt and pepper as you like.

Method
Put the beans covered with water from the previous night. In the morning
boil them for about 15 minutes,then pour away the water and put all the ingredients sliced in a cassarole with the beans Cover with lukewarm water,add the salt when the beans are cooked.Cook for about forty minutes on a medium fire. Transfer everything in an oven dish,salt the beans and cook another 30 to 40 minutes in the oven until they look creamy and all the water is reduced.

Although I pre-soaked and threw away water I fried off and added liquids including tomatoes after. Bitter taste might be because I singed but is it bad to eat the cooked beans if i didnt preboil and throw away? Can it be harmful ala kidney beans?
