In a bowl, combine plantains, eggs, onions and mash thoroughly together.
Let mixture cool, then roll misture into 1 inch balls. Sprinkle each ball with baking powder.
Combine plantain flour and crackermeal.
Roll the plantain balls in the mixture until thoroughly coated.
Deep fry in already hot oil for 2 -3 minutes....
Heat guava paste and baron's passion fruit sauce until guava paste melts, creating a lovely thick red syrup for dipping...yum...
