Green tomato chutney

Green tomato chutney

Makes 1 small jar. Great with chicken and pork dishes.

Ingredients
300 g green tomatoes, chopped in smaller pieces
½ red chilli, finely chopped, or ½ tsp dried chilli flakes
1 tsp nigella seeds
1 tsp coriander seeds,
1 tsp cumin seeds
a dash of ground ginger
100 ml granulated raw sugar
2 tsp wine vinegar
oil
salt

Method
1. Grind the coriander and cumin seeds in a mortar.
2. Heat up some oil, and fry the different spices (chilli, nigella seeds, coriander, cumin and ginger) for just a few seconds.
3. Add the tomatoes, the sugar, the wine vinegar and season with salt.
4. Let it simmer for 30-45 minutes - until it thickens into \"chutney consistency\".

Just made it today - delicious! Only variation was I didn't have nigella seeds.
