  • 300 g green tomatoes, chopped in smaller pieces
  • ½ red chilli, finely chopped, or ½ tsp dried chilli flakes
  • 1 tsp nigella seeds
  • 1 tsp coriander seeds,
  • 1 tsp cumin seeds
  • a dash of ground ginger
  • 100 ml granulated raw sugar
  • 2 tsp wine vinegar
  • oil
  • salt
1. Grind the coriander and cumin seeds in a mortar.
2. Heat up some oil, and fry the different spices (chilli, nigella seeds, coriander, cumin and ginger) for just a few seconds.
3. Add the tomatoes, the sugar, the wine vinegar and season with salt.
4. Let it simmer for 30-45 minutes - until it thickens into "chutney consistency".

Makes 1 small jar. Great with chicken and pork dishes.

Method
