Ingredients
Serves 2
4-6 little lamb chops
A drizzle of olive oil
Salt and pepper to season
Salsa:
6-8 small vine ripened tomatoes,de-seeded, chopped into small chunks
1 red chilli, finely sliced
4 heaped tbsp chopped coriander
2 heaped tbsp chopped mint
1/2 clove garlic, crushed
2 - 3 tsps capers
A dash of olive oil
Juice of 1 small lime or lemon
Salt and pepper to taste
Method
First, prepare the salsa by mixing all of the ingredients together, allowing it to marinade whilst you cook the chops.
1. Preheat a griddle pan/frying pan till hot.
2. Drizzle a little oil onto the chops and season with salt and pepper. Rub into the meat.
3. Cook on the griddle for a few minutes each side (or to your liking)..i like mine to be a little pink in the middle.
4. Serve chops with some cooked couscous (cooked according to your packet instructions) and the salsa.
