6 large firm peaches, or canned halves
2 tablespoons butter
1 1/2 tablespoons sugar
1/4 cup macaroon cookie crumbs
1/2 C Marscapone
1 egg yolk, beaten
1 tablespoon cognac or juice
4 teaspoons sweet sherry or apple juice
1/4 cup water
Method
Peel peaches, cut in half, remove pits. Scoop out a little pulp to enlarge hollow. Mash pulp. Cream butter, marscapone and sugar, and mix with crumbs, peach pulp, egg yolk and cognac. Set aside.
Grill peaches cut side down on med low heat for a few minutes, enough to caramelize. Remove peaches from grill and place on buttered baking dish.
Stuff peaches with marscapone filling. Put 1 teaspoon sherry on each.
Place under broiler for 3-4 minutes.

This sounds lovely. I just made this sort of similar but super easy grilled peach dessert using in-season palisade peaches.
preheat grill/broiler
cut peaches in half, remove pit, sprinkle both halfs with brown sugar
close-broil under medium hot grill for 8-10 minutes
serve with a little clotted cream and vanilla yogurt mixed with maple syrup
