  • 5-6 Apricots halved and pitted
  • 4-6 Plums/Pluots/Peaches halved and pitted
  • 1 lemon
  • 4 tbs sugar
  • 16 oz Whole Milk Ricotta Cheese
  • 1 tsp Vanilla Extract
  • 1/4 Whole Milk
  • Honey (I prefer Avocado Honey, but use your favorite type of honey)
  • Canola Oil
Brush the exposed flesh of fruit with olive oil. Let stand. Mix together Ricotta, zest of lemon, juice of lemon, milk, and sugar together until the ricotta has loosened up a bit. Let this mixture stand. Place fruit flesh side down on very hot grill until grill marks form (2-3 minutes top). Remove the fruit and reserve. Serve 2 or 3 halves of fruit with a heaping dollup of ricotta mixture and drizzle it all with the honey. T
