Grilled Stoned Fruit with Ricotta and Honey

A wonderful summer dessert. A combination of fruit works best, but you can use peaches, apricots, nectarines, whatever is fresh and in season. I love this recipe with Avocado honey, something we can get down here in Florida, however any honey you prefer works great.

Ingredients
5-6 Apricots halved and pitted
4-6 Plums/Pluots/Peaches halved and pitted
1 lemon
4 tbs sugar
16 oz Whole Milk Ricotta Cheese
1 tsp Vanilla Extract
1/4 Whole Milk
Honey (I prefer Avocado Honey, but use your favorite type of honey)
Canola Oil

Method
Brush the exposed flesh of fruit with olive oil. Let stand.

Mix together Ricotta, zest of lemon, juice of lemon, milk, and sugar together until the ricotta has loosened up a bit. Let this mixture stand.

Place fruit flesh side down on very hot grill until grill marks form (2-3 minutes top). Remove the fruit and reserve.

Serve 2 or 3 halves of fruit with a heaping dollup of ricotta mixture and drizzle it all with the honey.
