Ingredients
200 grams of ground lean turkey breast
3 asparagus stalks
80 grams of cucumber
1/4 of an onion
a clove of garlic
dried parsley
green curry paste - 7 grams
coriander - half a bunch
sea salt and pepper
dried tarragon
15 grams of red and green lettuce
Method
Take the ground turkey breast and flatten it on a chopping board.
Finely chop the onion, garlic and coriander and mix it with the green curry paste.
Season the turkey with some pepper, sea salt , parsley and tarragon.
Mix the ground turkey with the green curry mixture with a splash of lemon juice from half a lemon
Wrap the turkey mixture in a cling film (Plastic Wrap) and let it rest for an hour or two in the refrigerator
Take the turkey mixture and with a wet hand shape it into a burger patty.
Spray the patty with some olive oil and put it on the grill with 5 minutes for each side.
For the asparagus, boil it in some salt water for 4 minutes and set it aside.
After the patties are done, take the two patties and plate them up like two buns of a burger with asparagus , cucumber and some lettuce leaves in between and season with a drizzle of olive oil , salt and pepper.
Garnish with coriander leaves and some sliced cucumber. :) Bon Apetit!
